Rabbi Amy's Fast Orange Cake

Ingredients

1 3/4 cup plus 2 tablespoons flour
1 1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1/2 cup orange juice
grated rind of one orange
1/2 cup shortening

Instructions

Put all ingredients together in a mixing bowl and beat at medium speed for 4 minutes.

Pour into a well greased and floured loaf pan.

Bake at 350 degrees for 1 hour.

When cool, dust with powdered sugar.
